2025’s Hotel Restaurant Renaissance

OK, we’re calling it: In the year ahead, hotels will be more than just somewhere to sleep. Once overlooked, their restaurants have had a global glow-up and are attracting diners from all over the world thanks to Michelin-starred chefs, critically acclaimed menus, and dining experiences to rival the best standalone restaurants. 

In fact, a rising number are becoming destinations in themselves—a reason to stay at the hotel in the first place. In 2025, new foodie hotels to travel for will include the farm-to-table 1 Hotel Copenhagen, and the reopened, sky-high Park Hyatt Tokyo. 

The spike in demand is clear in Hotels.com data: 71% of travelers say they’d be interested in booking hotels with Michelin stars, celebrity chefs or hot restaurants. There’s also often a flurry of global searches on the site for hotels that launch new, high-profile spots, such as ITO at the Fontainebleau Las Vegas, which saw a 200% rise in searches after the the restaurant opened in February 2024 (use the “restaurant” filter under “Amenities” to find properties with on-site dining).

“Restaurants add to the storytelling of a hotel,” says Jules Pearson, Global VP of Food and Beverage Development for Ennismore hotel group, which includes The Hoxton, Delano and 25hours. “No longer do they need to create wacky room packages, they can instead host pop-ups, masterclasses, special events and dinners to get people’s attention.”  

Ultimately, when you eat dinner in a restaurant, you’re not just refueling—you’re immersing yourself in the local culture and creating memories that linger long after you’ve checked out. In 2024, Hotels.com noticed a 40% year-on-year increase in positive reviews that featured the keywords “restaurant,” “bar” and “chef.” So, for a stay that’ll leave you hungry to return, make 2025 the year you check yourself into a hotel with a truly magical menu.
